The perfect way to kick the lockdown blues was to make this serenely beautiful part of the south of India my home for a month. Here's welcoming you all to my home away from home in Kerala! Since SwanKitchen is now in the land of spices, I had to kick start my Malayali culinary journey with this lip-smacking slow-roasted chicken. I'm in love with the process of dry roasting powdered spices and frying the meat in coconut oil with shallots and curry leaves. I had to give this immensely popular Nadan chicken a shot and of course I had to give it my twist by adding some freshly harvested green peppers. I promise you, you will be left licking your fingers.

3 tsp Red chili powder
3 tsp Coriander powder

3 Sprigs of Curry Leaves
Salt to taste

2 tbsp Chopped Garlic
1.5 cups Chopped & Whole Shallots
1 Green Pepper String (optional)
