Huge boom in regional Indian restaurants, bars: Restaurateur A.D. Singh

New Delhi, March 18 (IANS) The food market in India has changed a lot in the last couple of years and there has been explosion of interest, says popular restaurateur A.D. Singh, who has been in the industry for 25 years.

Singh, who has spent 25 years as a restaurateur and has invested 15 years in the Olive Group -- which consists of Olive Bar & Kitchen, Olive Bistro, Sodabottleopenerwala, Ek Bar and Guppy by ai, among other eateries.

"Market has changed a lot in these 25 years, people were not at all adventurous, but they've been exposed to food shows and travel and are much more adventurous today. It's been an explosion of interest in food, so it's much more fun for us restaurateurs and chefs," Singh told IANS.

He feels that today a lot of youngsters are exploring innovative ideas and opening restaurants with cool new formats.

"This is a very exciting time for all of us as some of these are really good. We are increasingly following international trends and there is great curiosity about what's happening in the food space all around the world," he said on the sidelines of Amazon India Fashion Week (AIFW) Autumn-Winter 2016.

Singh has been at the forefront of the food and lifestyle revolution sweeping the country. He is credited with the introduction of international cuisines and restaurant concepts that, until then, India had never seen.

"When my contemporaries and I started off as restaurateurs, we looked outwards. We wanted to bring in the international cuisines to India. Today's customer and restaurateurs are wanting to explore our own roots, our own cuisines, our own tastes and flavours.

"This is leading to a huge boon in regional Indian restaurants and bars. Interestingly, we see the same trend worldwide... It's not just the Indian guys and the diaspora, but the international diner is very curious about the evolution of the Indian food," he said, adding that he is not in favour of foreign cuisines being 'Indianised'.
